Microgreens are young seedlings of edible vegetables and herbs. It is the best organic food. May be planted with or without soil with no fertilizers. It is fancy and healthy food at the same time. Many chefs like to add it to their special dishes as they give adorable shapes to the food. It is considered an important food for healthy individuals who seek multivitamin natural food free from contamination. microgreens boast a more intense flavor than larger vegetables and herbs. They have four to six times more nutrients than their mature counterparts. These plants have many advantages as a source of easily digested fibers (gentle and soothing effect on GIT). They are tasty vegetables with pretty shapes and colors that encourage children to eat healthy food. These plants have medicinal activities as they boost immunity, enhance memory, improve diabetic individual health, lower the risk of heart diseases, and protect vision. Optimization of microgreen growth according to UAE environmental conditions is an important goal of this project. Evaluation of propagation conditions will be evaluated according to analysis of nutrients, vitamins, and antioxidant effects to give future producers of microgreens in the Emirates the best tips to grow healthy food in a cost-effective manner that encourages large-scale production and increases healthy food consumption. Fujairah Research Centre starts this project as it adheres to sustainability vision of the UAE.
